Cranberry Relish
- 1 (3-ounce) package lemon gelatin
1 (3-ounce) package orange gelatin
1 (3-ounce) package strawberry gelatin
5 cups hot water- 1 cup sugar
1 cup orange juice
1 tart green apple, peeled cored and ground
1/2 cup orange peel (no pith), ground
1 (12-ounce) package fresh or frozen cranberries, ground
- Dissolve gelatins in hot water. Add sugar and orange juice, stirring to mix well.
- Use food grinder or processor to grind apple, orange and cranberries. Add to the gelatin mixture and stir until mixed.
- Refrigerate until ready to serve.
Serves 12.
