I hadn't found any recipes for Mahi-Mahi steaks here so I thought I'd find a good one to add. This one is great. Enjoy! Submitted by Jason Davis from Omaha, Nebraska.

Jason's Grilled Mahi-Mahi with Chives

1/4 cup chopped fresh chives
1 plum tomato, peeled, seeded and minced
2 cloves garlic, minced
4 tablespoons olive oil
1 lemon, juice
4 (8-ounce) mahi-mahi fillets
2 ounces crumbled feta cheese

  1. Marinade: In a bowl, mix chives, tomato, garlic, olive oil and lemon juice.
  2. Place fillets in bowl and coat with marinade, cover and refrigerate until coals are ready (about 20 minutes).
  3. Place fillets over hot coals for 3 to 5 minutes and baste with marinade. Turn fillets and top with feta and any remaining ingredients in marinade, then cover for 3 to 5 minutes or until done.
    Remove from grill, garnish with a single chive per filet, add black ground pepper to taste and serve.
