Wild Game Recipes

An easy meal to make using fresh cod, potatoes and peas. Turmeric and paprika add a dash of color for a nice presentation. Substitute your favorite vegetable for the peas, if desired.

Microwave Cod Atop Peas and Potatoes

1 1/2 pounds red potatoes, scrubbed and cut into 1/2-inch cubes
1/2 cup water
1/4 teaspoon ground turmeric
1/2 cup water
1 cup frozen peas
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon butter, melted
1 teaspoon salt, divided hse
1/2 teaspoon ground black pepper - divided use
4 (6-ounce) cod fillets
1/8 teaspoon paprika

  1. Place diced red potatoes in a microwave-safe baking dish. Combine with water and turmeric; mix well. Cover and microwave on HIGH for 10 minutes, or until tender; stir once halfway through.
  2. Stir in peas and top with parsley, butter and half the amount of salt and pepper. Arrange cod on top, season with the remaining salt and pepper and sprinkle with paprika. Cover and microwave on HIGH for 5 minutes, or until fish flakes easily. Serve hot.

Makes 4 servings.
