Red snapper is quickly cooked in a cinnamon-scented Mediterranean-style tomato sauce with sliced green olives.

Microwave Mediterranean Fish

1 onion, sliced
2 tablespoons olive oil
1 garlic clove, crushed
1 (14 to 15-ounce) can stewed tomatoes
4 tablespoons tomato-based salsa
1/4 teaspoon ground cinnamon
1 1/2 pounds red snapper
12 green olives, sliced

  1. In a microwave-safe dish, combine sliced onion, olive oil, and crushed garlic clove. Cover and microwave on high for 3 minutes. Drain. Stir in stewed tomatoes, salsa, and cinnamon. Top with red snapper and sliced green olives. Cover and microwave on high for 3 to 4 minutes or until the fish flakes easily with a fork.

Makes 4 servings.
