Red snapper is a meaty and moderately oily
fish that pairs beautifully with a dijon mustard sauce.

Snapper with a Creamy Dijon Sauce
- 4 red snapper steaks
3 tablespoons olive oil
1 small shallot, minced
1/2 cup cider vinegar
1 1/2 teaspoons black pepper
1 bay leaf
1 1/2 cups dry white wine
1/2 cup heavy cream
2 sticks (1 cup) butter
3 tablespoons dijon mustard
- Make the creamy dijon
sauce first. To a small saucepan over medium heat, combine shallots,
cider vinegar, black pepper, the bay leaf, and dry white wine.
- Simmer until mixture is
reduced by half.
- Then add heavy cream and
simmer until reduce by half.
- Strain through a mesh
sieve and return to heat.
- Whisk in butter and dijon
mustard.
- Preheat grill to medium
high.
- Brush fish with olive
oil and season with salt and pepper and place on the grill.
- Cook for about 2 minutes
and then flip, cooking for 2 to 4 minutes longer.
- Serve the red snapper
with a generous helping of the creamy dijon sauce.
