Crispy fried breaded salmon 'burgers' are sprinkled with lemon juice and served in toasted burger buns spread with mayonnaise and topped with lettuce leaves.

Sassy Salmon Burgers

2 (14.75-ounce) can salmon, drained and flaked
1 1/2 cups bread crumbs - divided use
3 large eggs, beaten
2 tablespoons crushed dried parsley
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons vegetable oil
4 burger buns, split and toasted
4 tablespoons mayonnaise
1 lemon, juiced
4 lettuce leaves

  1. Combine salmon, 1/4 cup bread crumbs, beaten eggs, parsley, salt and pepper in a bowl. Mix well and form into 4 large patties. Dredge until evenly coated in remaining bread crumbs.
  2. Heat oil in a large, nonstick skillet over medium-high heat. Add patties and cook 5 minutes per side, or until golden brown and crisp. Adjust heat as needed to brown evenly.
  3. Spread mayonnaise on bottom halves of rolls. Top with salmon patties. Sprinkle with lemon juice and top with lettuce leaves and cover with top halves. Serve immediately.

Makes 4 servings.
