A browned roux is the base
for this savory brown sauce served over hot cooked rice.
Brown
Sauce with Rice
- 6 tablespoons all-purpose
flour
1/4 cup butter or margarine, melted
2 cups beef broth or consomme
1/4 teaspoon garlic powder
1/8 teaspoon ground black pepper
2 tablespoons Worcestershire sauce
3 cups hot cooked rice*
- Cook flour and butter
in medium skillet over low heat until brown, stirring constantly.
Gradually add broth. Cook, stirring, until mixture boils and
thickens. Add garlic powder, pepper and Worcestershire sauce;
continue cooking 1 minute. Serve over hot rice.
Makes 6 servings.
*According to the USA Rice
Federation, 1 cup uncooked long grain rice cooked in 2 cups liquid
for 18 to 20 minutes will yield approximately 3 to 4 cups cooked
rice.
