Cabbage For The Man Who Hates Cabbage

1 small to medium head green cabbage
1/2 cup (1 stick) butter
1 (12-ounce) can Aunt Penny's White Sauce (it's the best)*
1 cup shredded Long Horn or cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup cracker crumbs (your favorite)
  1. Core and cut cabbage into strips and boil for 5 minutes. Drain.
  2. Melt the butter and combine with the white sauce.
  3. Line a greased 9 x 9-inch square baking dish with the 1/2 cabbage strips, spoon 1/2 the sauce mixture over cabbage strips, sprinkle with 1/2 the cheeses and cracker crumbs. Repeat layering with remaining ingredients, ending with the cracker crumbs.
  4. Bake, uncovered, at 350°F (175°C) for 30 to 40 minutes.

Makes 6 servings.

*Or if you cannot find Aunt Penny's White Sauce, you can substitute with 1 1/2 cups medium white sauce.
