Calcutta Rice

No recipe image available.Sliced celery, apples and almonds are sautéed in butter, seasoned with curry powder, and tossed with rice.

Recipe Ingredients:

2 tablespoons butter or margarine
1 to 2 teaspoons curry powder
1 teaspoon seasoned pepper
1 cup sliced celery
2 medium apples, peeled, cored, and sliced
1/4 cup sliced almonds
3 cups cooked rice*

Cooking Directions:

  1. Melt butter; stir in curry powder and pepper. Add celery, apples and almonds; cook until tender crisp. Stir in rice and heat thoroughly.

Makes 6 servings.

*According to the USA Rice Federation, 1 cup uncooked long grain rice cooked in 2 cups liquid for 18 to 20 minutes will yield approximately 3 to 4 cups cooked rice.
