Rich and cheesy is the best way to describe this creamy polenta recipe. Serve as a side dish with any of your favorite Mexican recipes.

Cheesy Green Chile Polenta

2 cups milk
1 cup chicken broth
3/4 cup yellow cornmeal
4 cloves garlic, chopped
1 (7-ounce) can diced green chiles
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
3/4 cup freshly grated Parmesan cheese
3/4 cup frozen corn, thawed
1/3 cup chopped fresh cilantro
1/2 cup whipping cream
  1. Combine milk, chicken broth, cornmeal, and garlic in a large saucepan. Heat to a gentle boil; stir constantly for 10 to 15 minutes or until thickened.
  2. Add chiles, cheddar cheese, Monterey jack cheese, Parmesan cheese, corn, cilantro and cream. Season with salt and black ground pepper. Heat through.
