Rich and cheesy is the best way to describe this creamy polenta recipe. Serve as a side dish with any of your favorite Mexican recipes.
Cheesy Green Chile Polenta
- 2 cups milk
1 cup chicken broth
3/4 cup yellow cornmeal
4 cloves garlic, chopped
1 (7-ounce) can ORTEGA® Diced Green Chiles
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
3/4 cup freshly grated Parmesan cheese
3/4 cup frozen corn, thawed
1/3 cup chopped fresh cilantro
1/2 cup whipping cream
- Combine milk, chicken broth, cornmeal, and garlic in a large saucepan. Heat to a gentle boil; stir constantly for 10 to 15 minutes or until thickened.
- Add chiles, cheddar cheese, Monterey jack cheese, Parmesan cheese, corn, cilantro and cream. Season with salt and black ground pepper. Heat through.
