If you are tired of serving potatoes the same way time after time you must try this delightful cheesy casserole.

Double Cheddar Cheese Potatoes

1 (40-ounce) package frozen scalloped potatoes
3 cups (12 ounces) finely shredded sharp cheddar cheese
1/2 small sweet onion, minced
1/2 (7-ounce) jar roasted sweet red peppers, well drained and diced
1/4 teaspoon freshly ground pepper
1 1/2 teaspoons Worcestershire sauce
Vegetable cooking spray
1/4 cup fine, dry breadcrumbs
  1. Thaw scalloped potatoes in refrigerator overnight.
  2. Stir together scalloped potatoes and next 5 ingredients. Spoon into an 11-x7-inch baking dish coated with cooking spray. Sprinkle with breadcrumbs.
  3. Bake at 350°F (175°C) for 1 hour or until deep golden brown. Let stand 10 minutes.
