This creamy mashed potato, spinach, chives and cheddar cheese casserole is a great tasting solution for getting kids to eat their spinach!

Green Mashed Potatoes

8 large potatoes
1 cup sour cream
1 teaspoon granulated sugar
1/2 cup butter
2 teaspoons salt
1/4 teaspoon pepper
Milk as needed
2 tablespoons minced chives
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup shredded cheddar cheese
  1. Cook and mash potatoes. Add sour cream, sugar, butter, salt and pepper. Beat until light and fluffy, adding a little milk at a time for creamy consistency. Add the chives and spinach and beat well.
  2. Spoon into a greased casserole and sprinkle the cheddar cheese on top.
  3. Bake at 400°F (205°C) for 20 minutes, or until hot and cheese is melted.

Makes 8 servings.
