The great thing about marinated side dishes
is that they are made ahead of time, freeing you up from dealing
with last minute preparations and thus giving you more time to
spend with your guests.
Marinated Zucchini
- 3 medium zucchini, thinly sliced (about
1 1/2 pounds)
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- !/4 cup chopped celery
- 1 tablespoon chopped pimento (optional)
- 1/3 cup cider vinegar
- 1/4 cup granulated sugar
- 1/4 cup vegetable oil
- 1 tablespoon white wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- Dash hot pepper sauce
- In glass bowl, combine first 5 ingredients;
toss lightly.
- Combine cider vinegar and next 6 ingredients;
mix well and pour over zucchini mixture. Cover and chill 8 hours,
stirring occasionally.
Makes 4 to 6 servings.
