Marinated Zucchini
- 3 medium zucchini, thinly sliced (about 1 1/2 pounds)
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- !/4 cup chopped celery
- 1 tablespoon chopped pimento (optional)
- 1/3 cup cider vinegar
- 1/4 cup sugar
- 1/4 cup vegetable oil
- 1 tablespoon white wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- Dash hot pepper sauce
- In glass bowl, combine first 5 ingredients; toss lightly.
- Combine cider vinegar and next 6 ingredients; mix well and pour over zucchini mixture. Cover and chill 8 hours, stirring occasionally.
Makes 4 to 6 servings.
