A tasty 'potatoes au gratin' frittata.

Skillet Potatoes Au Gratin with Fresh Rosemary

3 (11 1/2-ounce) packages frozen potatoes au gratin
1/2 cup all-purpose flour
1/2 teaspoon freshly ground pepper
1 1/2 teaspoons chopped fresh rosemary
2 large eggs, lightly beaten
1/4 cup (1/2 stick) butter or margarine - divided use
1 medium-size yellow onion, diced
8 bacon slices, cooked and crumbled, (optional)
  1. Thaw potatoes au gratin in microwave at MEDIUM (50% power) 5 to 6 minutes.
  2. Combine potatoes, flour, and next 3 ingredients.
  3. Melt 2 tablespoons butter in a 10-inch overproof skillet over medium-high heat; add diced onion, and saute 4 to 5 minutes or until tender. Stir into potato mixture.
  4. Melt remaining 2 tablespoons butter in skillet; add potato mixture.
  5. Bake at 425°F (220°C) for 25 minutes or until golden brown. Sprinkle with bacon, if desired. Cut into wedges, and serve immediately.
