Smothered Okra

2 pounds okra, sliced
3 tablespoons vegetable oil, divided
1 tablespoon all-purpose flour
1 onion, chopped
1/2 bell pepper, chopped
2 ribs celery, chopped
5 tomatoes, chopped
Salt and pepper to taste
Creole Seasoning to taste*
  1. Heat 2 tablespoons of oil over medium heat in a skillet and fry okra until it is no longer sticky.
  2. In another skillet, make a medium dark roux with remaining 1 tablespoon oil and the flour. Add onion, bell pepper, and celery. Cook until tender.
  3. Add tomatoes and simmer for 5 minutes. Add okra, and season with salt, pepper and Creole Seasoning to taste. Cover and simmer for 1 hour.
