This is a great side dish for parties or buffets.

Stouffer's Bacon Scalloped Potatoes

3 (11 1/2-ounce) packages STOUFFER'S® Scalloped Potatoes
1/2 medium-size sweet onion, diced
2 large celery ribs, diced
1 garlic clove, minced
2 tablespoons olive oil
2 tablespoons cider vinegar
8 bacon slices, cooked, crumbled and divided use
1/4 cup chopped fresh flat-leaf parsley, divided use
1/4 teaspoon pepper
  1. THAW scalloped potatoes in microwave at MEDIUM (50% power) 5 to 6 minutes.
  2. SAUTE onion, celery, and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes. Remove from heat. Stir in vinegar, half of bacon, 2 tablespoons parsley, and pepper. Stir in potatoes. Spoon into a lightly greased 11-x7-inch baking dish.
  3. BAKE at 375° F for 30 minutes. Top with remaining bacon and 2 tablespoons parsley.
