A quick and easy version
of a southern favorite, smothered okra.
Vegetable
Delight
- 1 tablespoon butter or
margarine
1/4 cup chopped onions
1/4 cup chopped green peppers
1/2 clove garlic, minced
1 1/2 cups frozen okra and tomatoes
1/8 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon pepper
- Sauté onion, pepper
and garlic in butter until tender.
- Combine remaining ingredients
and cook 5 minutes or until bubbly, stirring frequently.
