A quick and easy micro-cooked
chile relleños casserole. Serve with your favorite salsa
or warmed enchilada sauce spooned on top.

Chile Relleños
- 5 large eggs
1 cup (4 ounces) shredded Wisconsin Monterey Jack cheese
1 cup (4 ounces) shredded Wisconsin Sharp Cheddar cheese
1 cup cream-style small curd cottage cheese, well-drained
2 (4-ounce) cans chopped green chiles, drained
1/4 cup all-purpose flour
1/2 teaspoon baking powder
- Combine all ingredients in mixing bowl.
Mix until well-blended. Pour into 10-inch quiche dish.
- Microwave on medium high, uncovered, 12
to 15 minutes.
- Allow to set 10 minutes before serving.
