Quick and easy, weekday gumbo.
Southern Gumbo
- 1/4 cup bacon drippings or butter
- 1 large onion, chopped
- 1 (14 1/2-ounce) can ready-cut tomatoes
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 3 cups okra, sliced
- 3 cups chicken broth
- 1 cup uncooked rice
- Melt drippings or butter in large heavy
soup kettle or Dutch oven. Add onion and saute until lightly
browned.
- Add remaining ingredients. Heat to boiling,
tightly cover and reduce heat. Simmer for 30 minutes. Serve hot.
Makes 6 servings.
