A vegetabe soup with vegetables
only, that's ready to eat in about 30 minutes...after prepping
the veggies.

Soup
1 cup diced potato
1 cup chopped cabbage
1/2 cup chopped onion
1/2 cup diced celery
1/2 cup sliced carrot
1/2 cup sliced green beans
1/4 teaspoon dried oregano
1/4 teaspoon dried marjoram
1/4 teaspoon salt
1 bay leaf
1/8 teaspoon ground pepper
2 cups water
- In a kettle, combine diced potato, chopped
cabbage, chopped onion, diced celery, sliced carrots, sliced
green beans, oregano, marjoram, salt, bay leaf, pepper, and water.
Cover and boil gently for 10 minutes.
- Stir in chopped tomatoes and cook until
the vegetables are tender, about 20 minutes.
- Remove the bay leaf before serving.
Makes 6 servings.
