Honey-sweetened, whole wheat muffins.
2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon salt
1 large egg
3/4 cup milk
1/4 cup vegetable oil
1/4 cup honey
- In a large bowl, combine whole wheat flour, baking powder, and salt; make a well in the center.
- In another bowl, combine together egg, milk, oil, and honey; add to the dry ingredients, stirring just until moistened.
- Spoon into greased muffin tins, filling two-thirds full.
- Bake in a preheated oven at 400°F (205°C) for 20 minutes.
Makes 12 muffins.
