Another name for 'baked eggs' is 'shirred eggs'. If you've never tried them, maybe it's time with this simple, yet tasty dish.
2 tablespoons butter
1 cup shredded cheddar cheese
6 large eggs
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1/2 cup crushed saltine crackers
1/4 cup shredded cheddar cheese
1/2 cup heavy cream
- Preheat oven to 350°F (175°C).
- Melt butter in a baking dish, sprinkle with 1 cup shredded cheddar cheese.
- Drop in eggs, sprinkle with salt and pepper, cover with crushed crackers mixed with 1/4 cup shredded cheddar cheese.
- Drizzle with cream and bake for 15 minutes.
Makes 3 (2-egg) servings.
