Classic Belgian Waffles
Serve Belgian waffles topped with fresh fruit and billowy clouds of sweetened whipped cream, or try them spread with peanut butter and drizzled with maple syrup.
2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
2 large eggs
1 cup milk
1 cup buttermilk
1/4 cup canola oil
Optional Toppings: Maple syrup, toasted nuts, fresh berries, whipped cream
- Preheat waffle iron.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, nutmeg, cinnamon, and salt.
- In a small bowl, whisk together eggs, milk, buttermilk, and canola oil. Pour over flour mixture and stir together. Do not over-mix.
- For each waffle, lightly spray or brush waffle iron with canola oil. Pour in about 1/2 cup of batter and spread to edges with knife. Cook for 30 seconds with lid open. Close lid and cook for about 4 minutes or until golden brown.
- Serve with toppings, as desired.
