Fruity Cottage Waffles with Orange Cream

1 1/3 cups small curd cottage cheese
1/2 cup fresh raspberries
2 tablespoons honey, or to taste
4 teaspoons mini chocolate chips
16 frozen mini waffles or 4 frozen (4-inch) waffles, toasted
1/4 cup whipping cream
1 tablespoon powdered sugar
1/4 teaspoon orange extract
- For Waffles: In a medium bowl, blend all ingredients except the waffles. Place a heaping tablespoon of cheese mixture in the center of each waffle. Top each waffle with a dollop of the Orange Cream.
- For Orange Cream: In a small, chilled mixing bowl, using an electric mixer, whip together all ingredients until soft peaks form.
