A griddle cake by any other name -- is a pancake or flapjack! This is a good basic recipe for the popular 'breakfast cake'.
1 cup milk
1 large egg
1/2 teaspoon salt
1/4 teaspoon granulated sugar
1 cup all-purpose flour
2 teaspoons baking powder
Butter for cooking and accompaniment, as needed
Maple syrup for accompaniment
- In a blender or food processor, combine milk, egg, salt and sugar. While processing, add flour and baking powder. Process for 10 seconds.
- Melt about a tablespoon of butter on a moderately hot griddle (a drop of water should sizzle) and pour the batter in 4-inch circles. When the bubbles pop, and edges appear dry, flip once. Repeat as needed.
- Serve hot with butter and maple syrup.
Makes 10 (4-inch) griddle cakes.
