Creamy Brown Rice Pudding
This tasty and very easy brown rice pudding offers a twist on the traditional version.
3 cups cooked brown rice, warm
1 (12-ounce) can NESTLÉ® CARNATION® Evaporated Fat Free Milk
3 large egg whites
1 large egg
1/2 cup apple juice
1/3 cup raisins
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/8 teaspoon ground nutmeg (optional)
- Combine rice, evaporated milk, egg whites, egg, juice, raisins, sugar, cinnamon, vanilla extract and nutmeg in medium saucepan. Cook over medium-low heat, stirring constantly, for 8 to 10 minutes or until thickened. Serve warm.
