Mascarpone puts a delightful Italian spin on the classic dessert, Peach Charlotte.
2 cups peeled, sliced fresh peaches
1/4 cup peach schnapps liqueur
1 cup (8 ounces) Wisconsin Mascarpone cheese
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
3 tablespoons peach schnapps liqueur
1 pint fresh raspberries
Toasted slivered almonds
- Put peaches in a small bowl. Add the 1/4 cup liqueur and let stand for several hours.
- In a small bowl, combine the mascarpone, sugar and vanilla using an electric mixer. Add the 3 tablespoons of liqueur. Beat. Chill.
- To serve, divide the peaches among 6 stemmed glasses. Top each with 3 tablespoons Mascarpone mixture. Sprinkle with fresh raspberries and almonds. Serve immediately.
