Beef Dinner in a Dish for Two
Ground beef, rice and yellow summer squash casserole for two.
6 ounces lean ground beef
1/4 cup chopped onion
1/2 cup cooked, cubed yellow summer squash
1/2 cup coarsely chopped green pepper
1 cup cooked rice*
1 large egg
1 clove garlic, minced
1/2 teaspoon basil
1/2 teaspoon oregano leaves, crushed
1/8 teaspoon ground black pepper
1/2 cup shredded cheddar cheese
- Cook beef and onion in medium skillet until meat is no longer pink, stirring to crumble. Pour off fat.
- Add squash, green pepper, rice, egg, garlic, basil, oregano and black pepper.
- Spoon into 1-quart casserole. Sprinkle with cheese.
- Bake in a preheated oven at 350°F (175°C) 25 minutes, or until heated through.
