Fresh broccoli salad with smoked bacon crumbles, red onion and shredded cheddar cheese tossed in a tangy, sweet and creamy dressing.
8 slices smoked bacon, cooked and crumbled
2 bunches broccoli, chopped, cooked crisp-tender and drained
1 1/2 cups shredded cheddar cheese
1 medium red onion, chopped
1/4 cup red wine vinegar
1/8 cup granulated sugar
3/4 cup mayonnaise
1 tablespoon fresh lemon juice
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
- In a large bowl, combine cooled broccoli, cheese, bacon and onion.
- Prepare the dressing by whisking together vinegar, sugar, mayonnaise, lemon juice, salt and pepper.
- Pour dressing over broccoli mixture and toss to combine. Cover and refrigerate until ready to serve.
