Chicken Salad in Apple Shells

Recipe Ingredients:

5 medium salad apples (4 halved and 1 diced)
3 pounds diced chicken breast or turkey
4 ounces diced celery
4 ounces diced onion
1 cup light mayonnaise
2 hard-boiled eggs

Cooking Directions:

  1. Cook meat in boiling water, remove from water and set aside. When cool, cut into bite-size pieces.
  2. In bowl, combine celery, onion and mayonnaise. Dice hardboiled eggs, and add with diced apple and chicken to salad mix.
  3. Slice each apple horizontally in half and carefully remove insides, leaving a 1/2-inch thick shell. Scoop one-eighth of the salad mix into each apple shell. Chill before serving.

Makes 8 servings.
