Lime Cream Layered Fruit Salad
A delightful, lime cream layered gelatin salad loaded with an assortment of fresh fruit—papaya, strawberries, honeydew melon and blueberries.
2 tablespoons lime juice
3/4 cup dairy sour cream
1/3 cup honey
1 tablespoon grated lime peel
1 1/2 cups whipping cream, whipped
1 pint strawberries, halved
3 cups honeydew chunks
1 pint blueberries
- Seed papaya, reserving 1 tablespoon seeds. Peel; cut into chunks. Set aside.
- Place reserved seeds and lime juice into blender container. Cover and process until seeds are finely chopped. Combine lime juice mixture, sour cream, honey, and lime peel; mix well. Fold into whipped cream.
- In 3 quart glass bowl, layer papaya chunks, strawberries, half of whipped cream mixture, honeydew, blueberries and remaining whipped cream mixture. Garnish with additional strawberry halves, if desired. Serve within 4 hours.
Makes 8 servings.
Variations: Substitute 3 cups peach chunks for papaya. Substitute 2 teaspoons poppy seeds for papaya seeds.
