Mesquite Grilled Chicken and Kiwifruit Salad
A simple grilled chicken salad with toasted walnuts and garnished with sliced kiwifruit. Serve as a salad or as a sandwich filling.
1 1/2 cups cubed grilled chicken
1/4 cup chopped celery
1/4 cup toasted walnuts, coarsely chopped
3 tablespoons mayonnaise
Salt and freshly ground black pepper
1 kiwifruit, pared and sliced
- Combine chicken, celery, walnuts, mayonnaise and salt. Spoon onto two lettuce-lined salad plates. Garnish each serving with kiwifruit slices.
