Minty Fresh Fruit Salad
A refreshing, healthy and minty summer fruit salad.
2 cups fresh blueberries
2 cups fresh strawberries, stems removed and sliced
10 fresh mint leaves, sliced
2 tablespoons mint jelly
2 tablespoons lemon juice
- Combine canteloupe, blueberries, strawberries and mint in large bowl. Microwave mint jelly in small, microwave-safe bowl on HIGH (100%) power for 30 seconds or until melted; stir in lemon juice.
- Pour jelly mixture over fruit; toss to coat. Refrigerate for one hour before serving.
Makes 8 servings.
