Vegan Caesar Salad

No recipe image available.Vegan's can have their Caesar salad and eat it, too! They'll find no anchovies or dairy cheese products in this recipe. Enjoy!

Recipe Ingredients:

Vegan Caesar Dressing:
1/2 cup Dijon mustard
1/2 cup whole grain mustard
1/2 cup non-pareilles capers
1/3 cup garlic, minced
2 teaspoons sea salt
2 teaspoons ground black pepper
1 ounces vegan Worcestershire sauce
1/2 cup nutritional yeast
1 cup fresh lemon juice
2 1/3 cups light olive salad oil

Salad:
1 pound romaine lettuce
4 ounces seasoned croutons
4 ounces Vegan Caesar Dressing (recipe follows)
2 ounces soy 'Parmesan', shaved or grated

Cooking Directions:

  1. For Vegan Caesar Dressing: Combine all ingredients except oil in a blender, cover and process for a few seconds; remove lid while continuing to run blender and slowly add the light olive oil in a small stream, continuing to blend until all oil is incorporated and dressing is emulsified.
  2. For Salad: Toss cleaned romaine lettuce and seasoned croutons with Vegan Caesar dressing. Top with shaved or grated soy 'Parmesan'.

Makes 4 servings.
