Sweet pineapple, pungent onions and brown sugar make for a simple, yet flavorful combination. Serve this relish warm on top of pork or grilled chicken.
1 tablespoon butter
2 small onions, chopped
1 (20-ounce) can pineapple chunks
1/2 cup firmly packed brown sugar
- In a heated skillet, over medium heat, melt butter. Add onions and sauté until browned, about 5 minutes; add pineapple, including juice, and brown sugar. Simmer for 30 minutes, or until thickened. Serve warm.
Makes about 3 cups.
