Apple and Marmalade Mackerel

Recipe Ingredients:

2 (8-ounce) whole mackerel or herring, cleaned, heads and tails removed
1 large dessert apple, cored and diced
4 tablespoons water
3 tablespoons thick cut marmalade
1 tablespoon whiskey

Cooking Directions:

  1. Preheat the grill.
  2. Place the apple and water into a saucepan. Bring to a boil and simmer for 3 to 4 minutes. Stir in the marmalade and whiskey
  3. Grill the mackerel for 6 to 8 minutes each side, brushing with the apple-marmalade sauce.
  4. Pour over the remaining sauce and serve with seasonal vegetables.
