This colorful and extraordinary sweet potato and bread stuffing makes enough to stuff a medium-sized duck or an 8 to 12 pound turkey.
12 slices old bread
3 cups sweet potatoes, cooked and mashed
3/4 cup chicken broth
1 tablespoon orange rind
1/2 cup minced onion
1/3 cup diced celery
1/2 teaspoon almond extract
1 teaspoon apple cider vinegar
1 teaspoon salt
1/2 teaspoon ground black pepper
1 large egg
- Tear bread into small pieces.
- In a bowl mix remainder of ingredients and then slowly toss in bread and mix lightly.
- Stuff the bird.
Makes enough to stuff 1 (8 to 12-pound) turkey.
