Brown Rice Royal

Brown Rice RoyalA deliciously simple side dish of brown rice cooked in broth and tossed with sautéed mushrooms and green onions.

Recipe Ingredients:

2 cups (about 8 ounces) sliced fresh mushrooms
1/2 cup thinly sliced green onions
1 tablespoon vegetable oil
3 cups cooked brown rice* (cooked in beef or vegetable broth)

Cooking Directions:

  1. Cook mushrooms and onions in oil in large skillet over medium-high heat until tender. Add rice. Stir until thoroughly heated.

Makes 6 servings.

*According to the USA Rice Federation, 1 cup uncooked whole grain brown rice cooked in 2 1/4 cups liquid for 40 to 45 minutes will yield approximately 3 to 4 cups cooked rice.
