Chilled Asparagus with Hazelnuts
Citrus and nut flavors blend to complement the glories of fresh asparagus.
1 to 1 1/2 pounds fresh asparagus
1/4 teaspoon freshly grated orange zest
2 teaspoons fresh orange juice
1 teaspoon fresh lemon juice
2 tablespoons olive oil
2 tablespoons finely chopped roasted hazelnuts
- Steam asparagus until crisp-tender. Drain well; chill.
- Whisk together all ingredients for the dressing, except nuts. Add salt and pepper to taste.
- Drizzle dressing over chilled asparagus, then top with the chopped hazelnuts.
Makes 4 to 6 servings.
