Colcannon (Irish Mashed Potatoes)

Recipe Ingredients:

2 pounds potatoes, freshly cooked and mashed
1/2 pound kale, just cooked, drained and finely chopped*
1/2 cup milk, or to desired consistency
1/4 cup butter
Salt and ground black pepper to taste

Cooking Directions:

  1. Mix potatoes, kale (or green onions) together.
  2. Heat some milk with the butter and beat it into the potato mixture until smooth and creamy.
  3. Season to taste with salt and pepper.

Makes 4 servings.

*Or 1 bunch of green onions (spring onions) finely chopped.
