Roasted Sweet Potatoes

Roasted Sweet PotatoesThis simple, colorful side dish of buttered, roasted sweet potato halves is sure to please the whole family.

Recipe Ingredients:

6 sweet potatoes, fresh
1/4 cup butter, melted
Salt and pepper to taste

Cooking Directions:

  1. Preheat oven to 375°F (190°C).
  2. Wash sweet potatoes well, removing any blemishes. Cut sweet potatoes in half, lengthwise. Place potatoes on a baking sheet or roasting pan, coat with melted butter and season with salt and pepper. Turn sweet potatoes onto the cut side, leaving a little space between each piece. You may need to divide them onto two baking sheets, depending on the size of the sweet potatoes.
  3. Place sweet potatoes in preheated oven and bake for 45 to 50 minutes, or until fork tender.

Makes 4 to 6 servings.
