Saffron and Raisin Couscous with Fresh Mint
An elegant side dish of saffron-flavored couscous with golden raisins and fresh mint.
2 cups water
1/2 teaspoon saffron threads
1 teaspoon extra-virgin olive oil
1/2 teaspoon salt
2 cups (10 ounces) couscous
1/4 cup golden raisins
3 tablespoons chopped fresh mint
- In a saucepan, bring the water to a boil and add the saffron. Remove from the heat, cover, and let stand for 30 minutes.
- Return the pan to the heat, bring to a boil, and mix in the olive oil, salt, couscous, and raisins. Remove from the heat, cover and let stand for 30 minutes.
Makes 8 servings.
