Crispy, pan-fried yellow squash fritters.
1 (10-ounce) package frozen sliced yellow squash or zucchini
2 large eggs, beaten
1/2 cup cracker crumbs
1/4 teaspoon ground black pepper
1 small onion, finely chopped
- Cook squash according to package directions; drain and mash.
- Combine squash and next 4 ingredients.
- Pour oil to a depth of 2-inches in a deep-fat fryer or heavy saucepan; heat to 375°F (190°C).
- Drop squash mixture by tablespoonfuls into hot oil (do not crowd pan); fry until golden brown, turning once. Drain on paper towels. Serve immediately.
Makes 10 fritters.
