Cheddar and Onion Brown Rice
Easily 'dress-up' plain brown rice by stirring in shredded cheddar cheese and sliced green onions.
1 cup whole grain brown rice
2 cups water
1/2 teaspoon salt
1 cup (4 ounces) shredded Wisconsin Aged Cheddar
1/2 cup thinly sliced green onion (with some of green)
1/4 teaspoon freshly ground pepper
- Stir together rice, water, and salt in a heavy sauce pan; bring to boil. Reduce heat to low; cover. Simmer until all liquid is absorbed, about 45 minutes.
- Remove from heat; let stand covered, about 5 minutes.
- Stir in cheese, green onion, and pepper. Cover; let stand 5 minutes to melt cheese.
Makes 4 servings.
