Hearty Noodle Soup
A good substitute for chicken soup, vitamin-packed spinach combined with a healthy dose of enriched egg noodles.
1 cup uncooked fine egg noodles
2 cups chicken broth
2 cups water
1/2 cup sliced carrot
1/2 cup sliced celery
1/4 cup green onion, sliced
1 cup chopped cooked chicken, turkey or beef
- In a medium saucepan, combine fine egg noodles, chicken broth, water, sliced carrots, sliced celery, and sliced green onions. Bring to a boil. Continue boiling over medium heat, stirring occasionally, for 10 minutes.
- Stir in cooked, chopped chicken; heat through.
Makes 6 servings.
