Sweet Potato and Kale Soup
A hearty sweet potato and kale soup with diced cooked turkey, served topped with sliced Muenster cheese.
1/2 cup chicken broth
1 1/2 cups chopped onions
3 cups chopped kale
3 cups peeled and diced sweet potatoes
1 cup diced cooked turkey
4 1/2 cups chicken broth
8 ounces Muenster cheese, sliced
- In a kettle, heat chicken broth and chopped onion; simmer, covered, for 5 minutes.
- Add chopped kale, diced sweet potatoes, diced turkey, and chicken broth; return to a simmer and cook 35 to 40 minutes, or until the kale and potatoes are tender.
- Serve topped with sliced muenster cheese.
Makes 8 servings.
