Bits of crisp sweet bell pepper add flavor and crunch to this tasty version of guacamole, garnished with cheddar cheese.
2 ripe avocados
3 tablespoons fresh lemon juice
1/2 cup diced onion
3 tablespoons chopped tomato
2 tablespoons chopped bell pepper
1/2 teaspoon salt
2 tablespoons minced fresh cilantro
Garnish: Shredded cheddar cheese
- Cut avocados in half and remove seeds. Scoop out pulp and place in a bowl. Drizzle pulp with lemon juice and mash.
- Combine with remaining ingredients, mix well, and sprinkle with cheese.
- Serve with tortilla chips or cut-up fresh vegetables.
Makes about 2 1/2 cups.
