Kiwifruit Lemon Sorbet:
4 ZESPRI™ Gold Kiwifruit, peeled, chopped
1 (12-ounce) can lemonade concentrate, thawed
2 cups water
Kiwifruit Drop (1 serving):
2 tablespoons Gold Kiwifruit Lemon Sorbet
1 1/2 ounces vanilla extract vodka, chilled
- For Kiwifruit Lemon Sorbet: Purée kiwifruit in food processor until just blended. (Do not crush kiwifruit seeds.) Stir kiwifruit purée into lemonade concentrate and water in medium bowl until blended.
- Cover and freeze for 8 hour or overnight. Scrape into flakes with spoon.
- To Make Kiwifruit Drop: Scoop Kiwifruit Lemon Sorbet into chilled martini glass. Add vodka and serve immediately.
Makes 4 cups sorbet and 1 cocktail.
