Wellington Slush

Recipe Ingredients:

2 kiwifruit
1/3 cup pineapple juice
1/4 cup orange juice
2 to 3 tablespoons granulated sugar, to taste
2 cups ice cubes
1/4 cup light rum (optional)

Cooking Directions:

  1. Add pineapple and orange juice, rum and sugar to a blender. Blend to mix well.
  2. Add the ice cubes and blend until smooth.
  3. Peel kiwifruit and slice into halves and spoon fruit into the existing mixture. Pulse until just blended, taking care not to crush the kiwifruit seeds.

Makes 2 servings.
