A moist and flavorful, 'cake-mix-easy' orange cake frosted with a creamy, orange-flavored whipped topping.
1 (18.25-ounce) package orange cake mix
1 (3-ounce) package orange gelatin
1/3 cup vegetable oil
2 large eggs
3/4 cup water
3/4 cup orange juice
8 ounces (1 cup) sour cream
1/3 cup orange juice, or as needed
1 cup granulated sugar
1 (8-ounce) container frozen non-dairy whipped topping, thawed
1 cup shredded coconut
- Combine all ingredients in large mixer bowl and beat at medium speed for 2 minutes.
- Bake in a greased 13x9x2-inch baking pan, in a preheated 350°F (175°C) oven for 30 to 40 minutes or until cake starts to come loose from edges of pan. Cool cake completely.
- For Icing: Mix sour cream, orange juice, and sugar well.
- Fold in whipped topping and coconut. Spread on cooled cake. Store in refrigerator.
